When I’m assembling a board for harvest season, I like to choose the best of what’s in season, of course, but I’m also looking for colors that evoke fall, like the burnt orange–hued persimmon, maroon red apples, and deep purple figs. That applies to cheese, too: Tangy Port Salut and nutty Mimolette provide eye-catching pops of bright orange color, and the layer of ash in Humboldt Fog, a lightly aged goat cheese, feels appropriate for Halloween, Thanksgiving, Friendsgiving, and beyond. Tie the board together with a light-bodied pinot noir from a warmer climate, like California, which will have a more forgiving fruit-forward profile and velvety texture than its cool-climate counterparts.
